Back in 2024, we luckily had the opportunity to try this coffee from our regular brought it from a roastery in Japan. It was an incredible unique taste experience. Now it’s time for us to roast it! We just received the lot 2024 which has a similar character to the one we tried. This coffee is a geisha variety produced by Pepe and his family in beautiful landscape of Imbabura, Intag valley in Ecuador.
What’s the Wave Washed?
WAVE is referencing a temperature wave, going from higher to lower temperature, utilizing fermentation tanks and refrigerators in a sustained way that keeps the embryo alive. This coffee underwent a 24 hours fermentation in tank followed by washing and 40+ days of drying in Finca Soledad’s dark room and shaded patios.
In the cup, we taste bright complex citrus fruits with hint of florality, ideal for the hot summer of May that simply can enjoy hot or iced pourover. It has a beautiful juicy sensation and lingering mouthfeel, with balanced citric acidity like oranges. For flavors, expected orange blossom when hot, and when warm to cold consistency sweet with tangerine, lemonade, followed by black plum.
