A washed Batian lot produced by the Salaverria family, on one of their farms, San Francisco.
To enhance quality, they focus on lot separation based on altitude, quality potential, and growing conditions. To do this, they separate small farms and blocks on each farm called tablones, and experiment with fermentation and soaking.
Processing:
This coffee undergoes washed processing. This process resembles “traditional washed processing”. After initial reception and sorting, the cherry is mechanically depulped and a demucilager used to remove almost all the mucilage with high pressure water, before the parchment is dried.
